Healthy Sweet Potato Bites

These little sweet potato toasts are SO good and make the perfect party appetizer (or at-home meal… I definitely ate these for dinner tonight!).

Aside from their delicious taste, sweet potatoes boast a variety of health benefits – they’re easy to digest, may help calm inflammation, and are packed with antioxidants like beta carotene, vitamins C, E & D, and minerals such as manganese and iron. They also contain compounds called phytochelatins that can bind to heavy metals such as lead, mercury, copper, & cadmium and safely remove them through the body. 

Pair them with heart-healthy hummus, nutrient rich tomatoes & cucumber, fresh herbs & Himalayan sea salt and you’ve got the perfect little dish that’s both healthy and tasty.

Sweet Potato Bites - Ingredients:

·      Avocado Oil* (for roasting)

·      Extra Virgin Olive Oil (for topping)

·      2-3 large sweet potatoes

·      1 cucumber

·      ½ pint grape tomatoes

·      Hummus

·      Small bunch fresh basil (about 5 leaves)

·      Small bunch fresh parsley

·      Himalayan Sea Salt**

·      Lemon Pepper

Directions:

1.     Preheat oven to 400°

2.     While oven is pre-heating, slice sweet potatoes into ½ inch rounds. Toss with avocado oil* in a bowl until well coated. Spread into an even layer in a roasting pan and top with sea salt.

3.     Place pan of sweet potatoes into the oven until one side just starts to brown, about 15 minutes.

4.     Remove from the oven, carefully flip each sweet potato over, place back in the oven and repeat until the other side has caramelized, about 15 minutes.

5.     While sweet potatoes are roasting, finely dice cucumber, tomatoes, basil & parsley. Toss in a bowl with a drizzle of olive oil plus sea salt & lemon pepper to taste.

6.     Top each sweet potato round with a schmear of hummus and a spoonful of cucumber-tomato mix.

7.     Serve & enjoy!

 

*Avocado oil is used for roasting because the smoke point of extra virgin olive oil is 374; once an oil passes it’s smoke point, it releases toxic fumes and free radicals that are harmful for your health.
